Figgy Toffee Pudding Cake at Bettola Bistro

Figgy Toffee Pudding Cake Recipe

For the Cake:
1 cup Sugar
1/2 cup Vegetable Oil
1 tsp Vanilla
3 Eggs
1.5 cups Flour
1/4 tsp Salt
1 tsp Baking Powder
1 tsp Baking Soda
1.5 cups Dried Figs, chopped
1.25 cups Water

For the Toffee Sauce:
1 cup Brown Sugar
3/4 cup Water
2 oz Brandy
1 Tbs Honey

Directions:
Preheat oven to 350 degrees.  Place water and figs in saucepan and bring to boil over medium heat.  Remove from heat and add baking soda, let rest.  Meanwhile, cream sugar and oil in mixer.  While mixing, add eggs one at a time, then add vanilla.  In a separate bowl, mix flour, salt & baking powder together.  Add flour mixture & fig mixture to mixing bowl and mix for 1 minute on medium speed. Pour mix into a greased 12 inch springform or bundt pan. Bake at 350 degrees for 30-45 minutes, until toothpick comes out clean.  Let cool for 20 minutes. Using a chopstick or skewer, poke holes all over cake. Pour toffee sauce (instructions below) over cake (can reserve some sauce to drizzle when served).  Let sit for 1 hour before serving.

To make the toffee sauce:
Combine all ingredients in a saucepan.
Bring to a simmer and cook for 3 minutes.
Remove from heat.

Serving Suggestion:
Warm cake in oven just before serving.
Serve with vanilla gelato, ice cream or whipped cream.
Drizzle reserved toffee sauce over plate.
Garnish with fresh fruit.
